The Dessert Fairy
My son is a vegetarian. Some people are in awe. Others feel sorry for my boy. I feel it is a personal decision that I have made with my child’s optimal health in mind. He has a whole lifetime to eat animal products if he so chooses. But right now he is a healthy blank slate that I feel is owed the very best start and foundation that I can possibly provide.
I am always researching, asking friends, and experimenting in the kitchen to find or bake nourishing but delicious alternatives to sugar-laden, lard-loaded, processed treats and goodies. I don’t want to deprive my child of the fun things to eat..I just don’t want him to have to pay for it with his health later on.
When we attended a birthday party last month, I was beyond thrilled to try some vegan desserts and cookies that tasted like the “real” deal. Plus, they looked cute too! If the hostess hadn’t informed everyone that they were dairy-free cakes and cookies, no one would have been the wiser. I had to call the Dessert Fairy immediately to place some orders. Once I perused their website, I was happy to find not just vegan treats, but gluten-free and sugar-free ones too! The Dessert Fairy also bakes regular dairy, sugary things as well.
Karla Hernandez tells us about her passion for baking and how that evolved into the specialty desserts business aptly named, the Dessert Fairy.

Have you always had an interest in baking?
Instead of bedtime stories, my mother and I would flip through Gourmet Magazines. At age 9, my first baking attempt was at “Cream Puffs with Vanilla Ice Cream and a Dark Cherry Wine Sauce” from Gourmet magazine’s Christmas issue.
How did Dessert Fairy come about?
Dessert Fairy started as a hobby while I was in the US. I took cake-decorating classes under Toba Garrett in the Institute of Culinary Education in New York. I would bake for friends and family and then neighbors started to notice as my apartment door always had sugar cookies, cupcakes, and caramel apples during Halloween.
As I lived in a community with a diverse population, I would get requests for egg-free treats from my Indian neighbors and gluten-free cakes from the center for ADHD children and a friend who had a sister with Celiac disease, and dairy-free cakes for a little girl who was allergic to lactose.; so I would try different recipes and look for those that would taste the best.
What are your best sellers?
The marquise au chocolat (frozen chocolate mousse) and its Peanut Butter version are the non-customized desserts that people usually order. Panna Cotta with santol preserves is also another favorite. For custom cakes, the chocolate cake with vanilla buttercream is the usual flavor.
What kind of specialty treats can you make?
For people with allergies or dietary restrictions, I can do vegan, dairy-free, egg-free, gluten-free cakes and cookies.
Any healthy desserts and cookies at Dessert Fairy?
It’s hard to call a dessert healthy unless it’s fruit but if you’re trying to cut the sugar or the cholesterol from eggs, or trying to stay away from white flour, then I can bake something without that ingredient or at least less of it. I don’t usually sell it but I think the healthiest would be a zucchini chocolate muffin made with whole wheat. It’s dense and chocolatey and you can’t even tell there’s zucchini!
Do your reduced everything recipes and sugar-free, dairy-free goodies still taste as good?
The chocolate recipes of reduced sugar, vegan or gluten-free are usually the ones that taste as good as the real thing. Other good ones are the green-tea gluten-free cupcakes and the red velvet or carrot vegan ones. The only problem is that the icing in vegan tends to be too sweet as you can’t tame the sweetness with dairy; and there’s still no non-dairy cream cheese available in the Philippines.
